Chocolate Cheesecake Brownies

This recipe makes delicious soft chocolate brownies. That not only looks good but tastes great too. They are easy to make and will certainly earn you “brownie points” if you want to impress the one you love with a Valentine’s Day treat.

125g butter

125g dark chocolate (chopped)

200g soft brown sugar

3 eggs (lightly beaten)

50g plain flour

50g cocoa powder

1/4 tsp baking powder

160g cream cheese

40g caster sugar

How to make:

  • Preheat oven to 180°C, 160°C fan oven, gas mark 4. Grease and line an 18cmx28cm traybake tin.

  • Put the butter, chopped chocolate and soft brown sugar into a medium sized saucepan over a low heat until the mixture is melted. Remove from the heat and whisk in the lightly beaten eggs.

  • Add the sifted flour, cocoa and baking powder. Stir until the mixture is smooth then pour into the baking tin.

  • Beat the cream cheese and caster sugar together then dollop onto the chocolate mix. Use a knife to swirl the cream mix to make a marbled pattern.

  • Bake for 35-40 minutes, insert a skewer to check if the brownie is cooked. Be careful not to overcook as the cream cheese will go brown. Leave to cool before cutting into squares, either bite size or larger squares.
