Festive Welsh Cakes

Welsh cakes have always been a family favourite and when we are all rushing about over the festive season, they are quick and very easy to make.

With family and friends visiting during this holiday season then why not surprise them with a warm plate of Welsh cakes, with a little added mixed spice to add a festive flavour, they can be enjoyed with a cup of tea, hot mug of mulled wine or a tot of homemade sloe gin, but that’s a recipe for another day!


  • Sift the flour, baking powder and mixed spice. Add the butter and rub in with your fingers until the mixture resembles fine breadcrumbs.

  • Stir in the sugar and sultanas, mix in the egg and if needed enough milk to make a firm dough.

  • Rollout out on a floured board to just over ¼ inch or 5mm thick. Cut out rounds using a 3 inch fluted cutter.

  • Now you need a griddle stone or heavy bottomed frying pan. Grease lightly with butter and cook the Welsh cakes on a direct heat for a couple of minutes on each side until browned on both sides. Remove from the heat and sprinkle some caster sugar over the cooked cakes.

  • Serve warm, delicious.
